Cinnamon Toast Waffles with Kokada Syrup

A naturally sweetened breakfast waffle that brings nostalgic cinnamon toast flavor! Topped with whipped cream and fresh fruit.

WHAT YOU WILL NEED

Ingredients:

  • 1 1/2 cups soy milk*
  • 1 tablespoon lemon juice or apple cider vinegar
  • 1 tablespoon ground flax meal
  • 3 tablespoons water
  • 1 1/2 cups all-purpose flour
  • 1/4 cup coconut sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 tablespoons Cinnamon Toast Kokada
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • Dairy free whipped cream, for topping
  • Strawberries, for topping

 

Kokada Syrup

  • 1 tablespoon vegan butter, melted
  • 2 tablespoons Cinnamon Toast Kokada
  • 2 tablespoons maple syrup

*Important to use soy milk (not other plant milks) for the buttermilk to ensure it curdles and thickens.

INSTRUCTIONS

  1. Preheat your waffle iron.
  2. Make the “buttermilk” by combining the soy milk and lemon juice. Let sit for 5 minutes.
  3. Make the flax egg by combining the flax meal and water. Let sit for 5 minutes.
  4. In a large bowl combine the flour, baking powder, cinnamon, nutmeg, and salt.
  5. In a separate bowl whisk together the Cinnamon Toast Kokada, melted coconut oil, and vanilla extract.
  6. Add the buttermilk, flax egg, and Kokada mixture to the dry ingredients.
  7. Mix with a wooden spoon until just combined, careful not to overmix.
  8. Grease waffle iron well with coconut oil.
  9. Scoop batter into the iron. About 1/3 cup of batter in each square (you may adjust depending on the size of your waffle iron).
  10. Cook for about 5 minutes, time may vary depending on your waffle iron. Don’t lift the iron until you’re sure it is cooked through, otherwise the waffle will break apart.
  11. While your waffles are cooking, make the Kokada syrup by whisking together the ingredients.
  12. Enjoy the waffles immediately with Kokada Syrup, fresh strawberries, and dairy-free whipped cream.
