Chocolate Covered Frozen Banana Bites

These frozen banana bites are the perfect way to satisfy your sweet tooth while also fueling your afternoon. With just a few simple ingredients and minimal effort, you can whip up a batch in just a few minutes! These Frozen Banana Bites are perfect for sharing with kids or friends, bringing to a party, as a quick after-school snack, or even as a better-for-you dessert option! The natural sweetness of ripe bananas combined with the refined-sugar-free, coconutty Kokada makes this a treat that’ll be loved by everyone. Pro Tip: Make an extra batch and store them in an airtight container in the freezer – you’ll have a delightful treat on hand whenever the mood strikes! The best part is, you can get creative with toppings and add-ons! From drizzling extra dark chocolate to a sprinkle to a sprinkle of coconut, you can customize these to your heart’s content!

PREPARE

Peel and cut the bananas into ~1/4 inch slices

WHAT YOU WILL NEED

  • 2 ripe bananas
  • 1/2 teaspoon Kokada Classic per bite (~1/4 cup total)
  • 1/3 cup dark or semi-sweet chocolate chips
  • 1 teaspoon coconut oil

INSTRUCTIONS

  1. Peel and cut the bananas into ~1/4 inch slices.
  2. Line a baking sheet with parchment paper.
  3. Spread 1/2 teaspoon of Kokada on a banana slice and sandwich it with another banana slice on top. Place on the parchment lined tray. Repeat until all the slices are used.
  4. Place the tray in the freezer for 1 – 1 ½ hours.
  5. In a microwave safe bowl, melt the chocolate and coconut oil together in 20 second increments, mixing in-between each one.
  6. Take the banana bites out of the freezer. Dip each bite half way into the melted chocolate and place back on the tray.
  7. Once all the bites have been dipped in chocolate, place the tray back in the freezer for 20-30 more minutes and enjoy!

Storage Note: Keep any extras in an airtight container freezer. Let them thaw for a few minutes before enjoying them again!
