WHAT YOU WILL NEED
1/2 cup butter, room temperature
1/3 cup white sugar + 2 tablespoons for rolling sugar
1/4 cup Kokada OriginalÂ
1 1/4 cup white flourÂ
1 teaspoon baking powder
1 teaspoon cornstarch
2 teaspoon matcha powder
1/4 teaspoon salt (omit if your butter is salted)
INSTRUCTIONS
In a large bowl using an electric mixer, beat the melted butter, sugar, and Kokada together for 1 minute.
In a separate medium bowl, whisk together the flour, baking powder, cornstarch, matcha, and salt. When measuring the flour, spoon it into the measuring cup, don’t scoop it. Then use a knife to scrape the top.
Add the dry ingredients to the wet and mix with a wooden spoon until a dough is formed.
Cover the dough with plastic wrap and place in the fridge for 30 minutes to chill.
Preheat the oven to 350 and prepare a baking sheet with parchment paper.
In a small bowl, add the additional 2 tablespoons of sugar.Â
Remove the dough from the fridge and roll it into balls using your hands (about 2 tablespoons of dough) then roll them in the sugar and place them on the baking sheet. Make sure to spread them 2 inches apart (you may need 2 trays). Use your palm to slightly flatten each ball.
Bake for 10-12 minutes. Remove from the oven and let them sit on the tray for 5 minutes before placing them on a rack to cool.
